the making of bread is both an art and a science. both qualities are true of our master baker and will be discovered in every loaf we bake. our breads are made in the finest artisan traditions it is a time honored process using the finest ingredients. there are no preservatives in our breads they are baked fresh dialy without the cold retardation of the dow or anything else that would be unnatural to the process. all breads are completely hand made even our baggets are hand molded. they are picture perfect and delightfully sophisticated.

we judge a wonderful bread by its crumb and its crust. the cibataa exemplifies this with an open airy crumb with a slightly striaded dow. holding it to the light you will notice that it glistens just a little. the crust is set by steam injection baked at 500 degrees yielding a slightly nutty flavor.

one of the secrets of great bread is the time honored tradition of using some of yesterday's dough in the mix. the previous day's dough will have become slight fermented with a unique developement of a particular taste blending into a perfect mix. it is a more costly and time consuming way to make bread but when the flavor is king it shows.

we firmly believe that happiness gets baked into bread. there is an invigurating sense that will uplift you with every bite. our customers joyfully taste and share that enjoyment. bread is for sharing, and the act of sharing bread is the backbone of our civilization. we are delighted to share it with you.
